- Appetiser: Cream, liver and cognac pate crowned with port wine and juniper jelly OR Spiced roasted pepper relish with croutons and crisps
- Entrees: Kangaroo fillet marinated in lemon myrtle and honey. Served on a spinach and sweet potato puree with a roasted macadamia sauce OR Salad of Goulburn river smoked trout and avocado mousse, dressed with baby capers, dill, red onion and tomato. Served with watercress and creme friache
- Main Courses: Char grilled great of chicken seasoned with a sundried tomato tapenade served with a mediteranean vegetable risotto, rocket, salsa verde and shaved parmasean OR Prime eye fillet of beef with a thyme roasted potato gratin, roasted pumpkin, buttered spinach, balsamic glazed onion, garlic mushrooms, red wine jus and bearnaise
- Cheeses: Australian cheeses served with dried muscatel grapes, pear paste, fruit bread and water crackers
- Desserts: Warm sticky date pudding topped with butterscotch sauce and served with cream OR White chocolate and passionfruit parfait with praline and a vanilla rasberry syrup
